Author Pinterest Night!

Every so often I get together with a couple of favorite author friends of mine, Belinda Boring, and Kamery Solomon, and we have what's affectionately called, "Pinterest Night." On Pinterest Night we each pick a recipe we want to try and/or a project we want to do together. Last night we decided to make cork/magnet boards for our offices, and to cook an appetizer, main dish, and dessert. Here's the results of our efforts compared to the Pinterest pictures/recipes we used. It was a really fun night, and I can't wait to do it again! :)

I really liked the idea of the mix and match squares, but I modified the design to fit what I was wanting for my office wall. The project was pretty easy, requiring cork board squares, fabric, ribbon, hot glue, and tacks. I also added a white board and magnets to mine. Here's my finished result:

Kamery chose our appetizer which was Zucchini Oven Fries. We were all really excited to try these out! Here's the Pinterest image:

Our version didn't turn out quite as well. The recipe said to bake them for 30 minutes and at that time most of ours came out burned. There were a few that survived and they were tasty, though not very crisp. My suggestion would be to cook them for less time directly on a spray coated rack vs. a cookie sheet. Here's the one we cooked that "survived," with a little ranch dressing:

Belinda picked a yummy looking Tuna Melt with tomatoes and avocado to be our main dish. Here's the Pinterest photo for it:
We loved this dish! I think we all like it with just a little more cheese than the recipe called for. That helped to set all the flavors off in a great way! Here's our picture:

I chose the dessert for our party, with a little unanimous help from Bels and Kam. We tried out the Reese's Peanut Butter Freezer Pie. Here's the Pinterest image:
This dessert was an all around winner and so easy to make I'm sure I will take it to a lot of parties in the future. It was DE-LIC-OUS!!!! It is also very sweet, so beware. More than one piece may put you in a sugar coma. My family LOVED it though. The recipe called for a chocolate pie crust, but the store didn't have any so we used an Oreo pie crust instead. It worked out great! Here's our pic:

All-in-all, I'd say it was a pretty successful night! We ate our delicious dessert while we watched the oh-so-hot Zac Efron in The Lucky One, which is a fabulous movie for all you romance lovers like us out there! I highly recommend it! :)
